Almost Instant Apple Pie Rice Pudding
Homemade rice pudding in a flash! This comforting dessert is packed with apple pie flavor and comes together in just minutes using leftover rice and a pressure cooker.
Servings: 8
- 4 cups leftover cooked rice
- 4 cups finely chopped sweet apples such as Envy or Gala (about 3-4 depending on their size)
- 3 cups unsweetened plant milk
- 1 cup golden raisins
- 1 Tablespoon apple pie spice or 21/2 teaspoons of cinnamon plus 1/2 teaspoon nutmeg
- 1/2 teaspoon vanilla bean powder
- 1/4 teaspoon cardamom
Place all ingredients in the electric pressure cooker and cook on high pressure for 5 minutes.
Quick release pressure and enjoy hot, or chill for a firmer texture. If you don’t have a pressure cooker, combine the plant milk and spice in a large saucepan over medium heat on the stove and bring to a boil. Be careful not to let it boil over.
Add the remaining ingredients and return to a boil.
Reduce heat and cover.
Simmer for about 10 minutes or until most of the liquid is absorbed.
