Frozen Fruit Cobbler

This Frozen Fruit Cobbler is a naturally sweet, easy-to-make dessert (or breakfast!) featuring warm, juicy fruit topped with a spiced oat crumble.

Equipment

  • 9-inch silicone baking pan

Ingredients

  • 2 pounds of frozen fruit such as diced mangoes, pitted sweet cherries, berries, or a combination
  • 2 cups gluten-free rolled oats
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla bean powder
  • ¼ teaspoon nutmeg
  • teaspoon cardamom
  • 2 large very ripe bananas (about 1 cup)
  • ¼ cup Date Paste or more to taste

Instructions

  • Preheat oven to 350°F.
  • Place the frozen fruit in a 9-inch silicone baking pan.
  • In a large bowl, mix the oats and spices.
  • Next, in a blender, purée the bananas. Pour over the two cups of oats and mix until fully incorporated.
  • Cover the frozen fruit with the oat topping and bake for 40-45 minutes.
  • You can also place this in the dehydrator instead for 4-6 hours.

Notes

  • This is delicious hot, right out of the oven, with or without
    Cherub Sauce. It makes an incredible dessert when
    served warm with Banana Nice Cream.
  • Leftovers are great when reheated in the microwave.
  • Please understand that frozen fruit is not always as sweet as
    fresh. Therefore, if you’d like this recipe to be sweeter,
    consider adding Date Paste to the fruit before baking.
  • When you use frozen fruit in a dessert recipe like this cobbler,
    the juice of the fruit will seep to the bottom of the pan. We like
    having that built-in “fruit sauce,” but if for any reason you don’t
    want to have that juice under your cobbler, then defrost the
    fruit thoroughly and drain before baking.
