Potato Waffles

A simple, nutritious, and delicious way to enjoy Yukon Gold potatoes. With just one ingredient and a few easy steps, you can have crispy, golden waffles that are perfect for any meal!

Equipment

  • Waffle iron

Ingredients

  • small Yukon Gold potatoes (3-4 ounces each)

Instructions

  • Wash and dry the potatoes, but do not peel them and leave them whole.
  • Bake or microwave the potatoes until soft.
  • Preheat the waffle iron.
  • Press one potato in each square on the waffle iron and cook for 10-12 minutes until golden brown. If the waffle maker doesn't open easily without the potatoes sticking, close the lid and cook a few minutes longer. When finished, they should release easily from the waffle iron.
