Potato Waffles
A simple, nutritious, and delicious way to enjoy Yukon Gold potatoes. With just one ingredient and a few easy steps, you can have crispy, golden waffles that are perfect for any meal!
- small Yukon Gold potatoes (3-4 ounces each)
Wash and dry the potatoes, but do not peel them and leave them whole.
Bake or microwave the potatoes until soft.
Preheat the waffle iron.
Press one potato in each square on the waffle iron and cook for 10-12 minutes until golden brown. If the waffle maker doesn't open easily without the potatoes sticking, close the lid and cook a few minutes longer. When finished, they should release easily from the waffle iron.
