Hi, Friends!
Well, except for suffering from a severe case of very slowly resolving acute pancreatitis, it’s been a great week! Unfortunately, it’s most likely that this was a reaction to my last infusion of Keytruda, but they’re not 100% sure. So I am, reluctantly, going forward with my next treatment on Tuesday.
I’ll be driving to Stanford tomorrow to get another CT scan to check the state of my pancreas. If it’s looking good, I will get the infusion on Tuesday morning. If I get another bout of pancreatitis after the treatment, then they’ll likely have to delay the next one—or stop it altogether—and we’ll have to come up with another game plan.
I’m praying and hoping that this was a “one-off,” because the other three options for treating stage 3 lung cancer (complete lobectomy, chemo, and radiation) just scare the daylights out of me. Please continue to keep me in your thoughts and prayers that I’ll be able to move forward with immunotherapy. My next PET scan is on May 9, and that will give us conclusive information as to whether or not the treatment is working.
On a more positive note, my incredible new community, Chef AJ & Friends, kicked off this week with a Spring Cook-a-Long! Together we made brand new recipes like Zen Noodle Salad, Creamy Cucumber Salad, and a mocktail called the Mangorita (see photos above).
It’s not too late to join the fun! You can still get all the recipes in a beautiful PDF and the two-hour recording of the class for just $19—right here: Join the Community
As always, the recipes are whole food, plant-based, free of sugar, oil, and salt—and as always, delicious!
Wishing you a great week… and may you never know you have a pancreas 🤣

Love & Kale,
Chef AJ
