Smoky Butternut Bisque

Ingredients

  • 2 pounds butternut squash peeled and cubed
  • 10 ounces chopped onions about 3 cups
  • 6 cloves garlic
  • 3 cups water
  • 4 pear halves
  • ¼ cup gluten-free oats
  • 1 tbsp smoked paprika
  • ½ tbsp Benson’s Table Tasty or your favorite salt-free seasoning
  • tsp chipotle chili powder or more to taste
  • 1 cup unsweetened non-dairy milk

Instructions

  • Sauté the onion in a small amount of water in the Instant Pot before adding the rest of the ingredients. Use the Sauté setting and cook until translucent and slightly browned for added flavor.
  • Place all ingredients except for the non-dairy milk in the Instant Pot and cook on high pressure for 6 minutes.
  • Release the pressure and add the non-dairy milk.
  • Purée the bisque with an immersion blender right in the pot. If you do not have an immersion blender, carefully transfer the bisque to a blender to purée it.
